Turkey Bacon Cream Pasta with Tofu Shirataki Angel Hair

After diagnosed with gestational diabetes,
I tried many ingredients and food 
that are told to be effective to diabetes.

I also bought some alternative foods,
for rice -> miracle konjac rice

With tofu noodle, I thought of making Korean dishes only.
But when, why not trying cream pasta with tofu noodle?

So, today's dish would be ... trying tofu noodle!



Turkey Bacon Cream Pasta 
with Tofu Shirataki Angel Hair

Prep Time 20-30 Minutes
Cooking Time 30-40 Minutes
Serving 1-2 people

For preparation, cut or slice mushrooms, get the garlic from refrigerator.
Get turkey bacon, oh and angel hair noodle too.

Since I'm cooking both whole wheat angel hair pasta and tofu noodle,
I need three different pots for each one,
but if you are just cooking tofu, you don't need that much.

Just boil the water, put tofu noodle in it, cook it for 3-5 minutes.
That's it for tofu noodle.


Ingredients

1 Tbsp Butter - I used Kerrygold salted butter
1 Pack of Turkey Bacon - I used Oscar Mayer Turkey Bacon, 1 pack.
1 Pack of Tofu Shirataki Angel Hair - I tried Tofu Shirataki for the first time, it's good!
1 tbsp Garlic - for stir frying bacon, and for garlic aroma
1 Bertolli Alfredo Sauce - I had two bottles of Parmesan Cheese, so I used it.
8-10 Button Mushroom - I bought 1 pack of whole mushroom, and half of them are about to go bad so it's optional. Haha.


Instructions

1. Prepare the ingredients


Heat a pot of water to boiling on high for pasta noodle.
It's for my husband, he loves angel hair.

Add pinch of salt, for better taste but it's optional.





And for this pan, I will cook cream sauce.
Add turkey bacon to pan, in medium high heat.

Just personal opinion, 
but I think it's better to kinda burn turkey bacon.

but I rarely use them.

Pork bacon tastes so much better... Aww...


2. Cook Noodles (Tofu in a small pot, Pasta in a medium-big pot)


It's the first time I try Tofu Shirataki Angel Hair noodle.

I wasn't sure how to cook this noodle,
but since it's made from tofu, I decided to boil about 3 minutes or so.



This house food brand has shirataki from tofu,
actually you cannot call it shirataki since it doesn't have konjac.

It's more like tofu noodle.



I rinsed tofu noodle from package,
and boil a small pot of water.

When it's boiling, put tofu noodles into a pot.



I think tofu noodle is better than Miracle noodles
Tofu noodle tastes like somen noodle.



Cook Pasta noodle too!
I cooked angel hair noodle into the pot for my husband.

Since I have gestational diabetes, I try not to eat too much carbs.
So anyway cook past for about 5-6 minutes if you like al dente.
cook pasta for 8 minutes if you like fully cooked noodle.



3. Cook the cream sauce with turkey bacon and mushroom


Cook turkey bacon in a pot!
Cook, cut into pieces, stirring occasionally, 2 to 4 minutes.

I cut them in a pot, since it was frozen ones.
But if you're using unfrozen bacon, 
cut them into pieces before you cook.



Add teaspoon of garlic with bacon fats.



Oh, and I add butter for better taste.
I love love Kerrygold butter.

I bought pack of 3 from Costco, 
but Amazon also has some, too!



4. Finish the cream sauce


Sorry, for today's cooking, I used cream sauce.
I like mushroom sauce from Bertolli,
but all I have is Alfredo sauce.



They have pack of 4 in Costco!
And storage life is long enough :)


5. Finish the pasta


And now get the pasta noodle out of pot,
and cook with the cream sauce.

Stir occasionally for 2-3 minutes.
And it's done.

For tofu noodle, drain all water from tofu noodle,
put noodles into dish, and add cream sauce.



Divide the cooked pasta cream sauce into two different dishes. 
One with whole wheat pasta for husband,
one with tofu shirataki.

Garnish with the Parmesan cheese, pepper and parsley.


Well, for me tofu shirataki is so much better than miracle noodle.
Maybe I will buy more when I go to Korean market for grocery shopping.

I think it's a great alternative for people with diabetes.
