I recently got the easy tomato sauce recipe from food52!
It's the Marcella Hazan's Tomato Sauce recipe with onion and butter.
It turns out okay, not that great. I think it's because it's not Italian tomatoes?
Anyway it can be better if you cook with this sauce.
I used it to make Stir-fried tomato and scrambled eggs,
and it was better than just using canned tomato, or fresh tomatoes!

Marcella Hazan's Tomato Sauce
with Onion and Butter
Prep Time 10-15 MinutesCooking Time 1-2 Hours
Serving 3-4 people (or more if you use it as sauce to other pasta, or soup recipe)
Ingredients
2 Canned tomatoes - I used the Kirkland diced tomato, 2 cans2 Tbsp Butter - I used Kerrygold salted butter
1/2 Onion - You can use whole onion, but 1/2 size is okay.
Instructions
1. Prepare the ingredients

I had left with two diced tomatoes in my pantry,
and since I was going to buy more, I used them all.
Tomatoes can go bad easily in my fridge,
but canned ones are great, I don't have to worry too much about them.
In Costco they are about 8 dollars per 8 counts.
In Amazon they are about 18 dollars per 8 counts,
so go to Costco instead of Amazon!

One can has about 411g, which is 14.5 oz
It's sour taste, not like Italian tomatoes, I guess.
As always, I used Kerrygold butter.
One of my favorite, it's always good.
I also keep unsalted ones in my fridge for baking haha

For this time, I'm going to use the cooker.
I had to play with my toddler Laon and at the same time, I had to cook.
My only choice was to let this cook for me!
Of course you can use other pans.
This one, I bought from Costco at around 35 dollars or less.
From Amazon they have it at around 50.
I think 50 is kinda too much for this light cooker.
2. Cook the sauce

I used two canned tomatoes in here
So it would be about 14.5 + 14.5 = 29 oz,
or about 850 g of diced tomatoes.

And add 1/2 of the onion.
I guess onion is for sweetness of the sauce?

As I read the original recipe,
More butter, better taste.
But oh well, let's just keep it simple.
So I put 3-4 tablespoons of butter into the pot.

And I pressed 'Soup' mode.
The minimal time is 2 hours, but original recipe was about one hour.
But oh well, it's sauce anyway.
Oh and you have to leave the cover open, I think.
4. Finish the sauce

After one hour or so,
the tomatoes were all mashed, and the sourness was a little gone.
And the butter smelled so good in here.
But still sour. Maybe it's because not Italian tomatoes, but roma.
Well anyway, it wasn't turned out 'super great' but 'okay'.
I used this to make stir fry egg and tomato soup,
and my baby and picky eater husband loved it.
Would I make it again? Of course!
It's very simple and easy recipe for normal tomatoes,
if tomatoes were fresh and better fit for recipe,
it must have been so much better than what I had that day. :)
Still it was okay.
